What is the easiest, simple and neat way to organize your photos? Any software or app to recommend?

It really depends on which software application(s) you use for RAW conversion and editing.  My RAW conversion software of choice is Capture One, which is very popular among professionals.  You can organize your library within Capture One or use their Media Pro software, which adds even more options as far as making selections, organizing and archiving them.

There are actually several sites that allow you to print Instagram photos. Search Google for print Instagram photos and you'll find a list. 

As for copyright issues, Todd is correct.  However, if you were to receive permission from your friend it shouldn't be a problem.

Are there any good <$10k medium-format digital cameras?

There are some really good deals on used kits right now.  I think you could pretty easily get yourself into a Phase One P40+ kit in the $10k range.  There are also a lot of affordable financing options and tax incentives for your business (such as writing off the entire purchase the first year), should you decide to take the leap.

I recently purchased a Phase One IQ140 system to use alongside my Canon 5D mark III.  Both are incredible cameras and each have their pros and cons. The Canon is faster, better under low light conditions, shoots video and is quite a bit more affordable.  The Phase One has superior image quality (due to the larger sensor size), retains much more detail in the highlights and shadows and can flash sync at 1/1600th using a leaf shutter lens and Profoto Air system.
